真っ白い暖簾をくぐります。カウンターで。
おまかせコース(19800円)をいただきました。
お供は冷たい緑茶で。京都のお茶屋さんにこちら用に作っていただいているとのこと。檜の香りがします。いいお値段でしたが美味しい(^^;
◇先付「筍真薯に桜の葉、白魚、梅」
筍を刻み入れた真薯に桜の葉の塩漬けを。
◇お椀「天然山菜と貝」
貝は蛤・平貝・北寄貝。芹・クレソン・アマドコロ・うるいをこんもりと。
貝のお出汁がふくよかで滋味。
◇お造り「塩揉み鯛」
銚子の真鯛を塩揉みされたそう。酒と醤油で味付けした洗い海苔を添えて。
正直言ってこれまでいただいた鯛の中でいちばん美味しかった!
徳島ご出身の大将は鯛にはこだわりがあります。明石の鯛にはない良さを調理法で更に高めて。
ねっとりとした食感、豊かな脂の乗り。素晴らしかったです。
◇「花山椒の冷しゃぶ」(追加料金)
牛肩肉のクリと筍、花山椒。冷たいお出汁のジュレで。花山椒は和歌山。
クリの旨味に加えて和歌山の花山椒らしい強い味わい。唇が痺れます。花山椒はやはりこうでなくては。
◇「蚕豆と富山の蛍烏賊の飯蒸し」
旬同士の掛け合わせ。美味しくないはずがない。

・毛蟹とうすい豆の白和え
・桜鱒のフライ、和風タルタルソース
・福井の白エビともずく酢
・唐墨団子
・蓬麩の甘辛炊き

唐墨を丸めてあります。
蕗の炊いたものがひときわ美味。大将は、「お肉・お魚はもちろんだけど、野山に囲まれた日本だからこそ野菜や山菜を大切にしたい」と仰います。自ら妙高まで山菜取りに出かけられるほど。
◇「湯葉と筍の養老蒸し、桜海老の鼈甲餡」
大和芋のすりおろしに生湯葉。桜海老が香ばしい。

徳島の郷土料理である蕎麦米雑炊は鶏出汁で刻み野菜と蕎麦の実を炊いたもの。徳島では学校給食でも提供されるそうです。優しいお味がします。
◇甘味「桜あんみつと苺」
餡子玉・白玉・阿波番茶の寒天に黒蜜と桜パウダーのあんみつと、長野の苺のシロップ漬け。
阿波番茶の寒天とは恐れ入りました。
