う越貞 @大阪市 福島 ~これだけの魚が集まる店は凄い
私が心不全になったこともあり、久々に関西に来ております。
今日は久々に、会員の貞さんの『う越貞』へ。
まずは季節外れの6kのふくから始まりました。

左 東沢、右 大千
道南の知内町に拠点を置く東沢水産は、寿司職人から圧倒的支持を受ける高級ウニ「東沢の生うに」を手掛ける水産会社です。「橘の生うに」「はだての生うに」「大千の生うに」と並んで4大ブランドウニと称され、豊洲市場内でも常に高値で取引される人気のウニです。
その東沢のなかでもスペシャルの冠がつく商品は、その名の通り最高級ランクの極上品で通常品の倍以上の高値で取引される逸品です。

東沢も良い感じですが、大千は甘味が強く余韻が長いですね。
私は雲丹が凄く好きでも、かと言って苦手なわけでもないですが、なかなか凄いですね。
