ビアンカクリニックの秘書だった川田慶介氏が作ったお料理が自宅や出張で大人気過ぎて、今年の10/1に店舗化しオープンしたという会員紹介制のお店「割烹 かわだ」さんへ初訪問。
川田氏は飲食業界未経験とは聞いておりましたが、どのお料理も白トリュフやN25キャビアにフカヒレ等の高級食材をふんだんに使用しており、趣味で勉強したとは思えない程のレベルとオリジナリティを感じる事ができる逸品ばかりでご紹介してもらって良かったです(^-^)
どれも斬新でしたが特にトロタクは作る時の見た目が豪快で、更に美味しいので僕達を含め他の方々も無くなるまでおかわりしまくってました!!
また川田氏は
「僕の料理はまだまだです」
と自ら思っているようで、向上心も強いお方ですし、明るく気さくなお人柄を含めこれからが非常に楽しみなお店だと思います♪︎
