麻布十番はせべやビル地階に店を構えられ金沢(石川)、福井、富山の北陸三県の旬の食材と日本酒を愉しませてくれる口福料理店『かなざわ』さん。此処は正に麻布十番のオトナの隠れ家的要素が満載の割烹料理店です。オープンキッチンスタイルの厨房で腕を揮われるのは『なだ万』さん等、様々の銘店で料理長を務められていた『渡辺 恵』料理長です。いつもの通りL字型のカウンター席に陣取り自分が知る限り都内では『かなざわ』さんと日本航空(JAL)のファーストクラスぐらいでしか味わうことが出来ぬと思われる呑み口が心地良い出雲富士『天の叢雲 純米大吟醸酒』からゆるゆるとスタートです。料理は『煮鮑(ニアワビ)』、『子持ち昆布(コモチコンブ)』、ちぢみ菠薐草(ホウレンソウ)、千枚蕪漬(センマイカブラヅケ)に仕上げに本枯れ節を削り金箔(キンパク)をふりかけた先付から順に『鼈(スッポン)』と金沢大豆(カナザワダイズ)の生湯葉(ナマユバ)を使った玉締め(タマジメ)、能登産の『牡蠣(カキ)』は珠洲の塩と酢橘(スダチ)を絞りいただきます。凌ぎには『かなざわ』さんでのテッパンである『白海老(シロエビ)』と『赤鯥(ノドグロ)』のにぎり、向付には弾力が噛み込んだ歯を押し返す氷見産の『寒鮃(カンビラメ)』と上品な脂の旨味が愉しめる『寒鰤(カンブリ)』の鰤トロ、能登産の『毛蟹(ケガニ)』は蟹の甲羅の中に『蟹みそ』と『剥き身』がミルフィーユ仕立で綺麗に甲羅詰めされ二人で1パイの毛蟹を満喫します。そして「この辺で野菜でも」と九条葱(クジョウネギ)をさっと炊いた小鉢が供されますが単なる葱を炊いたものではありません。葱自体に『赤鯥(ノドグロ)』の脂の旨味が染み込んでいます。食べ進めますと中には日本海の白いダイヤと称される能登産の『赤鯥(ノドグロ)』が現れます。八寸風の位置づけの旬肴盛合せには『寒鰤(カンブリ)』西京漬に幻の魚『げんげ』、『赤海鼠(アカナマコ)』に能登海蘊(ノトモズク)、自家製の『海鼠腸(コノワタ)』には食感のアクセントに海鼠(ナマコ)の嘴(クチバシ)、『河豚(フグ)の白子(シラコ)』は『河豚(フグ)の卵巣(ランソウ)』の糠漬(ヌカヅケ)を塗し焼いた贅沢な夫婦焼と酒を呼ぶ酒肴を楽しみ能登産の『猪肉(シシニク)』のシンタマと特上ロースと芹(セリ)と牛蒡(コボウ)を胡麻風味(ゴマフウミ)の味噌(ミソ)に花椒(カショウ)を効かせた『猪肉(シシニク)の小鍋立(コナベタテ)』の美味しさに思わず身体を仰け反らせ締めの食事は『かなざわ』さんのSpécialitéの『赤鯥(ノドグロ)』とたっぷりの『唐墨(カラスミ)』の混ぜ込みご飯に『毛蟹(ケガニ)』の蟹汁(カニジル)と香の物という贅沢な食事が振舞われピスタチオのジェラートと餅皮どら焼と棒茶(ボウチャ)にて渡邉料理長のお任せのスペシャルコースはひと通りです。全席満席でてんてこ舞いの中、最高の笑顔と金沢、福井、富山の北陸三県の市場から直接買付されている旬の山海の幸を使い作られる素晴らしい料理の数々を北陸地方の地酒とともに五感で堪能させていただきました。都内で日曜日に美味しい和食を食べたいと思ってもなかなか希望に叶う店がありませんが麻布十番まで足を延ばすと『かなざわ』さんがあります。日曜日営業も自分にとっては魅力のひとつです。
