海老の食感の好みは人其々。私はもう若干プリっとした方が好きかな。

玉葱ドレッシングが合いますね!ちょっとしっかり目に炙ってあるので、肉々しいまでの食感と旨み!美味しい!

ヤバいー!!追い鰹のお出汁がきいてて、円やかな味噌で濃い目に。仕立ててあります。
クリーミーな白子とベストマッチですね!
微かな振り柚の香りが、全体を上品に引き締めてくれます。
今まで伊勢エビのお味噌汁1番だと思ってましたが、白子のお味噌汁が1番になりました!

以前の通常のシャリが、やわらかめで風味,存在感がなく好みではなかったのですが、
お米が脊振の棚田米に変わり、粒感もあるけど噛んでいくと馴染むとても良い米で美味しくなってました。
シャリのピークもバッチリで、本当に美味しかった!
そしてタイマーカリフォルニアキッチンの高岡シェフのお勧めで
初めてオーガニックのシャルドネを合わせたんですが、これがまた大正解でヽ(*´∀`)ノ
日本酒だと5種くらい頂くんですが、お酒自体も、お寿司も米×米だからか段々と味がボヤけてしまうのに対し、
ワインはひと口ごとに口の中をリセットしてくれるので、最後まで味がボヤけることが無いのです!

この日は志乃さんとのコラボで、なんちゃってオバマナイトにお誘い頂いて
凄いメンバーで最初緊張しましたが、最高の夜でした:*:✼✿(ღ✪v✪)
日本酒の豪華なラインナップと美味しいネタの数々で会費が2万円の特別コースでした♪
ご主人の田中さんは大変仕事熱心で真摯な方で、
前回よりもネタの仕事を色々試され追求されていて、色々尋ねると丁寧に答えてくださり
それが押し付けがましくなく、とても好印象です。
シャリは、この日の為に用意された最高ランク「特A評価」のお米「にこまる」
普通のお米の2倍はありそうな丸々とした粒張りのよさが特徴の品種を使ってあり
と~っても美味しかったです!!

移転される前から気になっていた多門さん。地元のお店はいつも先送りに・・・
misspepper様のレビューを拝見して、重い腰がやっと持ち上がり行って参りました♪
打ちっぱなしのコンクリートの外観は、一見お鮨屋さんには見えません。
店内に足を踏み入れると、中もコンクリートの打ちっぱなしの壁。
廊下を進むと左側に個室が2部屋並び、それから白木の美しいカウンター席が9席。
お席に着くとビックリなことに、お世話になっている院長先生が!
常連さんのようでシャンパーニュを楽しまれておりまして、私の到着が少し遅れてしまったので
お待たせしてしまったお連れの方にもシャンパーニュをご馳走してくださってました(^^;
雰囲気が良いと話していると、まだ入って間もない見習いくんが、「うちは高級風なんで」と爆笑
仰る通り個室からは、ある会社の会長さんが!
どうやら佐賀のリッチな方々が集うお店のようです。
ご主人は35歳、物腰の柔らかな方なので、カウンター席ではお隣同士のお客様も交え和気藹々と
リラックスして楽しくお鮨が頂けます♪
話がそれてしまいましたが、
6,000円、8,000円、10,000円のコースがあります。
10,000円でお願いしました。
お酒も分かりやすく美味しいラインナップで、お値段も控えめで嬉しい限り。
これまたご馳走になって美味しかった、鍋島の特別純米酒でお食事スタートです。

佐賀では定番の鍋島。
品良く瑞々しく、スッキリとしていて、余韻は甘みが広がります。美味しくてあっという間に飲んでしまいました。
多門さんでは、錫の酒器でお酒を供されます。涼やかでお酒が更に美味しく感じられますね。
・日高見 純米超辛口 600円 ○
宮城のお酒。
口に含むと最初は水のようにスルッと入ってくるのに、その後ぬるっとやわらかく濃くなって
最後はキレが良く面白い。
・宮崎産 鰹のたたき
鮮度が良く、綺麗なお味。甘めの玉葱のソースが合います。
・蟹
卵と和えてあって、予想より旨みが抜けてたかな。。。
・カワハギ肝あえ
一番美味しかった!!肝の処理が丁寧でとってもなめらか~絶品꒰ღ˘◡˘ற꒱❤
そこに紅葉おろしをほんのりと利かせてあって、ピリリとしたアクセントがgood

「私もシャンパン飲みたかった~」と言っていたのが聞こえたようで、院長先生が
私たちにハーフボトルをご馳走してくださいましたーヽ(*>∇<)ノ
シャンパーニュ地域のグランクリュものなので、心地よい泡としっかりとした酸と果実味で美味しい*ᵕ◡ᵕ)

ちょっと酔いが回って錫は重いし変わり栄えしないので、酒器を変えて頂きました。
京都の女性の作家さんのものだそう。素敵です。
