8月16日の昼餉は唐津将作店主が奥様と二人三脚で切盛りされるMichelin⭐️の日本料理店 『綾小路 唐津』さんにて。予約時間の12時に7名の予約客で一斉スタート。先ずは唐津さんより一献の日本酒が振舞われ昼のお任せ懐石のスタートです。八寸風の先付盛合せには『蛸(タコ)の卵(タマゴ)』に枸杞の実(クコノミ)、酸漿(ホオズキ)の中には彼の魯山人も好んで食べた『ゴリ』の佃煮(ツグタニ)、『黒梅貝(クロバイガイ)』の旨煮、自家製の『鯨(クジラ)ベーコン』、『絹海蘊(キヌモズク)』の酢物、黒豆(クロマメ)の茹で『夏豆(エダマメ)』、ゴーヤ、『丸十(サクマイモ)』の蜜煮(ミツニ)に『鱧(ハモ)』の骨煎餅(ホネセンベイ)の先付から。料理人の腕のみせどころの椀物には椀種には淡路島の『鱧(ハモ)』を使った綺麗な『r』の弧を描いた『ボタン鱧(ハモ)』に椀妻に冬瓜(トウガン)、吸口に青柚子(アオユズ)。昆布出汁を下支えする本枯節(ホンカレブシ)の吸い地の旨味が五臓六腑に染み渡ります。向付には噛み込んだ歯を押し返すような弾力と活かった身質の『目板鰈(メイタガレイ)』六貫と見るからに上質な天然『本鮪(ホンマグロ)』の赤身が三貫、これを焼海苔醤油(ヤキノリショウユ)に煎り白胡麻塩(イリシロゴマシオ)、ちり酢の三種で味比べをした後に凌ぎ代わりに供された叩き『オクラ』と『辛味大根(カラミダイコン)』を薬味に使った手打ちの『十割そば』。蕎麦粉は栃木鹿沼産を使用。キレのある辛口の汁が美味。焼物には滋賀県安曇川の天然物の釣り『鮎(アユ)』に美山産の『蓼(タデ)』を使った蓼酢(タデス)。炊合せは京野菜の炊合せでモロヘイヤ、『賀茂茄子(カモナス)』、振り柚子(フリユズ)の小芋(コイモ)、『赤万願寺(アカマンガンジ)』、南瓜(カボチャ)、『椎茸(シイタケ)』に針茗荷(ハリミョウガ)。そして締めの食事は盛り沢山。おくどさんで炊かれた米の煮え端が振舞われた後に香の物、ちりめん山椒(サンショウ)、本枯節(ホンカレブシ)と焼海苔(ヤキノリ)と美山産の平飼いの卵を使い味わい、更には『鱧(ハモ)』のつけ焼をオン・ザ・ライスしての自走式の『はも丼』と一度で三度の異なるごはんを生姜(ショウガ)を隠し味に使った留め椀とともにいただき食後の水菓子には美山産の『日本蜜蜂(ニホンミツバチ)』の超稀少で高価な『蜂蜜(ハツミツ)』をたっぷり使った『蜂蜜(ハチミツ)アイス』を半分はそのまま残り半分には添えられた檸檬(レモン)を絞りかけ味変を愉しみつつ完食。食後は唐津さんが点てられた薄茶(オスチャ)、そして女将さんが淹れてくれた焙じ茶(ホウジチャ)にて締めた昼餉。品数と料理構成は気持ち少な目に感じるも使われていた素材はいづれもピンの素材。特に『目板鰈(メイタガレイ)』に『本鮪(ホンマグロ)』と椀に使われていた『鱧(ハモ)』と炭火焼の『鱧(ハモ)』はいずれも白眉の美味しさでした。
