弾丸千里・4千㎞鉄道旅⑪ 高知県高知市
自宅&寝台泊を含めた4泊5日のJR利用弾丸ツアーも最終日となった12月26日、早朝岡山駅から「南風1号」に乗り瀬戸大橋を越えました。途中、多度津から土讃線を経て高知駅へ9時30分頃到着しました。
路面電車の1日乗車券を購入して市内見学に出発、坂本龍馬の生家跡と彼が育ったまち、その記念館、高知城等を見学してはりまや橋まで戻りました。そこから帯屋町商店街のアーケードをひろめ市場方面に進むこと少々、本日の昼食場所「明神丸 帯屋町店」を訪問しました。

鰹のたたきは注文が入るその都度、玄関先の焼き台に藁が投入され瞬く間に炎が登り立ちます。その中で金串の入った鰹の柵が焼かれます。短時間高温の炎で焼かれた鰹柵は急速冷却され、写真の通りに表面だけ白く色が変わり切り身の大部分は赤い刺身と同じ状態です。
まずは天日干しの塩が振られた塩たたきをそのまま頂きます。皮の部分に焦げが入りパリッとした歯ごたえありますが、身のほとんどは港に揚がったばかりの新鮮な刺し身状態のまま、旨みが深い鰹は普段口にする鰹とは比べ物にならない旨さです。
表面サクッと感じた次の瞬間とろっと溶けてしまいその後、焼き藁の燻香が鼻腔を刺激します。新鮮な鰹の旨みと焼けた藁の燻香が何とも例えようのない余韻を残します。
柚子酢も添えられていましたが、柚子酢に浸けると藁の香りが和らぎます。ワイルドに藁の燻香と鰹の味を愉しみたい方にはあまりお勧めできる食べ方ではありませんが、藁の燃えた香りが苦手な方や食べ過ぎて飽きた時には良いのかもしれません。
塩とタレそれぞれの定食を合わせて12枚あった鰹のたたきは、あっという間に2人の胃に収まり「塩たたき5切」を単品で追加注文しましたが、まだまだ10切れは食べられそうな勢いでした。
鰹と酔鯨(日本酒)に目を奪われがちでしたが、ご飯(米)も特筆する旨さでした。高知の米と言えば、日本最後の清流と言われる四万十川中流域、米どころ四万十町の米は美味しいと聞いていましたが、きっとその四万十町の米を使用しているのでしょう、炊き加減も丁度良く鰹のたたきとの相性も抜群で特にタレたたきとの相性が良かったです。ご馳走様でした。
