6月11日 昨日の口福な時間は徳島県・香川県・愛媛県・高知県を有する四国四県とほぼ同じ面積を持つ岩手県の中央部 人間の身体で表すならば臍の部分に位置する柳田國男の『遠野物語』で有名な民話の故郷 遠野です。日が沈みかける頃合いを見計らい向かった先は和田大地店主が腕を揮われる日本料理『旬菜 和田』さんです。席はいつものカウンター席に取らせていただき水無月のお任せ懐石の料理に舌鼓を打たせていただきました。先ずは日本一の生産量を誇る遠野産ホップで醸された遠野エリアでは『和田』さん以外では口にすることが出来ぬという一番搾りプレミアムの生ビールで渇いた喉を潤しました。先付には淡路島産の『鱧(ハモ)』と三陸山田産の『生海胆(ナマウニ)』を大葉で包んだ『鱧(ハモ)と海胆(ウニ)の包み揚げ』とサクッとパリッと揚げられた『幼雌穂(ヤングコーン)』の髭(ヒゲ)と実(ミ)の揚げものからスタート。余りにもビールが美味しく再度小さいグラスで生ビールを所望しリスタート。続いて目の前で手早く『真鯵(マアジ)』を三枚下ろしにし生姜(ショウガ)を鯵(アジ)と飾り切りにした胡瓜(キュウリ)と海苔(ノリ)で巻いた絶品の『鯵(アジ)の砧巻(キヌタマキ)』の酢味噌(スミソガケ)がけ。更には新玉葱(シンタマネギ)とともに味わう藁(ワラ)焼きの薫香が愉しめる『鰹(カツオ)』は行者大蒜(ギョウジャニンニク)の溜まり漬とともに美味しくいただきました。そして料理人の腕の見せどころの椀物には本枯節(ホンカレブシ)から引かれた一番出汁(イチバンダシ)の吸い地に椀種には葛打ちした『油目(アフラメ)』と『車海老(クルマエビ)』の海老真薯(エビジンジョウ)、鞘豌豆(サヤエンドウ)に蓴菜(ジュンサイ)、葛切り(クズキリ)に吸い口に木の芽(キノメ)の煮物椀。吸い地の旨味が五臓六腑に染み渡ります。そして大船渡産の天然『とら河豚(フグ)』の『白子焼(シラコヤキ)』とその『とら河豚(フグ)』の身と皮を『鮟鱇の肝(アンコウノキモ)』で和えた『河豚(フグ)のぶつねり』にも相通じる一品の余りの美味さに身を仰け反らせたのでありました。向付には『螺貝(ツブガイ)』に『真鯛(マダイ)』の最も美味しい腹身(ハラミ)に『赤烏賊(アカイカ)』、焼物には『本鱒(ホンマス)』の幽庵焼(ユウアンヤキ)に遠野産の3Lサイズのアスパラ焼。炊合せ代わりには丸々と肥えた超特大サイズの『ノドグロ』の霙餡(ミゾレアン)。日本海のダイアモンドに舌鼓を打ち暫しその余韻に浸るのも束の間。油物には立派な大きさの『岩牡蠣(イワガキ)』を使った牡蠣(カキ)フライです。クリスビーに揚げられた牡蠣(カキ)フライは半分はレモンを搾り味わい半分は自家製のタルタルソースと味わい一度で二度美味しいを愉しみ締めの食事は淡路島産の『鱧(ハモ)』のつけ焼と根曲り筍(ネマガリダケ)の炊込みごはんと『北海浅蜊(ホッカイアサリ)』の味噌椀と香の物。『鱧(ハモ)』のつけ焼には大好きな『山椒(サンショウ)』をたっぷりと掛け都合二膳いただきました。食後の水菓子には宇治の抹茶(マッチャ)を使った牛乳羹(ギュウニュウカン)と遠野産の黒平豆(クロヒラマメ)の甘露煮、ゴールデンキウイ、桜桃(サクランボ)と枇杷(ビワ)の果物にてひと通りとなりました。岩手県の臍(ヘソ)にあたる遠野の地で五味五感と味蕾を存分に楽しませていただいた口福な時間に感謝です。
そして盛岡へと戻った翌日12日の夜は『旬菜和田』さん謹製の淡路島産の『鱧(ハモ)』と遠野産の『根曲り筍(ネマガリダケ)』の炊込みごはんの御持たせをいただきました。竹皮の折箱に詰められたソレをウォーターオーブンで温め直して缶ビールを片手にTVを視ながらいただきました。この竹皮の折箱が実に優れもの。保存性だけではなく見た目もそうですがウォーターオーブンで温めると竹の香りに包まれて何とも気分が高まります。古くからの先人の知恵の竹皮の折箱と文明の利器のウォーターオーブンの新旧の文明を使い大好きな『鱧(ハモ)』のつけ焼を肴にサクッと締めて大満足したのでありました。
