東海地区蕎麦打ち職人の登竜門と言っても過言では無い紗羅餐。
蕎麦職人育成道場でもある名古屋星崎の紗羅餐出身者でミシュラン掲載店は数多ではありますが、その直営ミッドランドスクエア店へ旅行帰りの締めで伺いました。
○十割ざる蕎麦1265円
○ざるかけそば(二八)1430円
○桜えびかき揚げ(小)770円

十割笊冷の辛汁、二八ざるかけ温の甘汁、どちらも紗羅餐本店はじめその他支店ともにほぼ変わらない安定の風味、また紗羅餐出身の個人店もよく似た傾向が感じられます。
一方、目まぐるしく蕎麦打ち手が交替するミッドランドスクエア店の蕎麦切りは、矢張り今回も不安定に感じられました。
この日の蕎麦切りは、延し切り麺線細く揃っていますが十割短く切れ、二八も繋がり不十分であったこと残念。
水回しの失敗でしょう、加水が多過ぎたように感じました。
とは言え、常陸秋蕎麦特有の甘味は十二分に感じられるところ、玄蕎麦完全自社製粉の碾きたてであることは間違いないようです。
見た目十割粗挽き風に見えますが、喉越し優先させようとする為に、玄挽きぐるみ粉は30メッシュ篩いの中粗挽き粉に丸抜き微粉もミックスかな?
白星見当たらず細めの黒星少々で見た目は粗挽きっぽく見えますが、甘味はあっても香りが弱いところ挽きぐるみ100%では無いように思えました。
この日の蕎麦切りに関しては、帯に短し襷に長しの感想です。
紗羅餐ミッドランドスクエア店、次回に期待したいところです。
《付録》
玄蕎麦挽きぐるみの粗挽きは香りと味が命で喉越しは望めません。
真っ白な更科そばは勿論のこと、丸抜き並粉使用の江戸そば微粉二八も喉越しが命で風味、蕎麦本来の香りと味は粗挽きのようには望めません。
卓越した技術が無いと打てない玄挽きぐるみに丸抜き加えた一寸40本の超極細粗挽きでも、23本の二八にも喉越しでは絶対敵いません。
蕎麦通の常識、蕎麦通で無くても口の肥えたグルメさんならよくご存じでしょうが、蕎麦切りとはそういうものなんです。
