食材のベースは和の魚介と野菜。
すべてにおいて食材の自然な甘さ旨味が生きていて、カラダにすぅーと馴染む感覚。
シェフに尋ねると、ニンニクは使っているとのこと。
スペイン料理によくある、ニンニクの効いたパンチのある味付けとは一線を画す、自然派スパニッシュ。
これがバスク料理というものなのかなぁ。
一皿一皿にちょっとした感動がある、素晴らしいディナーコースでした。
