目黒のさんまじゃないけれど、「鄙には稀な」というか、社会通念上「有難い」グレコローマン系銭湯の集積地として、或いは/及び、現代最後のヴェンチャービジネス「ATARIYA」のメッカとして馳名なここ、入谷、千束に於いて、居酒屋の居抜きみたいみたいな店で、技を修めた本格のコックさんが手間をかけて磨いた「コンソメスープ」を出している、というのだから、世の中面白い。
面白い店ではカツヲのタルタルに決めている。
決めているのに理由はない、あったとしても忘れてしまった。
もしあるとすれば、カツヲは、戻りより初夏のもの、腹側のこってりくるカンツリー・スタイルよりも背側のさらりとしたハンサムな香りと口当たりを愛でるというのが、東京生まれのお作法ってもんだゼ! とは、オマエそんな事言ったって、今じゃエチゴ住まいの山出しじゃねーか、と、 #冷徹な事実 をご指摘いただくと一言もなく、ヤマダシビンボー! と叫ぶ以外、しようがないので黙っている。
そう思いながら、きっちり西欧割烹の教科書で構築された皿を前に、割り箸で頂戴できるのをいい事に、白ワインではなく「ひや酒」をグラスにもらい、粗く刻まれたカツヲの一片を口に含み、チュッ! と愉しみ、追いかけるように杯を傾けちびりとやると調子が高く、店の普請もあって、ディナーというより「晩酌」の型がきっちり決まらない、事もない。
