浅草橋・大阪串かつ テンテコマイさん。
カウンターに座っていると
冷蔵ケースの食材がたくさん目に入って
あれもこれも食べたくなって困ります。。。
今回、目が合ってしまったのは!
テンテコマイさんのTwitterに書いてあった
◆「稚鮎串」
はい、“香魚”としての鮎の
その気品の有る身の美味しさと
ワタの心地よい苦味♪
サクッと香ばしい衣が解れると、
仄かな塩味が稚鮎の香りが
フワッと舞い上がって、風雅。。。
本当は、お代わりしたかったんですけどね。
数量限定! 激戦の季節串です。。。
さて、こちらも限定串!
◆「天豆串」
“茹で天豆”と“焼き天豆”の違いは
先日の炭火焼き屋さんでも堪能したけれど。
“串かつ”の良さは
油と出逢って、艶めいた香りを
堪能できることでしょう♪
サクッと衣をかじれば、
ほっこりした天豆の蒼い香りと甘み!
茹でていないから香りが強く、
香りと旨みが濃い~!
また、目玉の
◆「車えび串」は、
10cmほどの体長。
あらかじめ塩をふってあるので
サクッとフワッと♪
“えび天”より軽快な口あたりの中に
ほっこりとした甘さと、しとやかな香り。。。
やっぱり、天ぷらとは香りの伝わり方が
格段に違いますね!
頭の素揚げは、パリッパリ!
市販のえび煎餅が真似できない
ワイルドな香りが弾けて。
しとやかな身の旨さと好相性です♪
定番串の中でも特にユニークなのは、
◆「納豆串」
サクッとした衣の中から
ひきわり納豆がフワッ♪
タレと香辛料で
臭みが出ない工夫をしている所は
流石のひとこと。。。
納豆のコクと香り立ちの良さを体感すれば
テンヤワンヤさんが
“小型爆弾”の製造基地である事が
誰もが納得する事でしようw
もう一つのお気に入りは、
◆「チーズベーコン」!
洋食屋さんのフライとの違いは
衣の細やかさと、揚げる温度でしょうか?
軽やかに衣が弾けた後に
ベーコンの旨味と香りが引き締まり、
チーズが艶めきたってトロッとグワッと!
素材の風味を軽やかに封じ込める
串かつマジック!
夏の疲れを心地よくほどいてくれました。。。
