色々なワインがグラスで楽しめる&料理もフュージョン系ということで、このコンセプトにピッタリ?!w
飲食には人一倍興味のある方との訪問。
そしたらば、たまたま?ドラミへのプレゼントで持参してくださったシャンパンが、こちらのお店の周年で空いてたり、料理とワインをサーブしてくださったソムリエさん(実は華道も嗜まれてて、お店の内装も手掛けてるらしい)松澤さんが、お連れさんと同じ歳で、音楽の話で盛り上がったりと、色々な偶然の出会いと趣味・実益を兼ねたバラエティに富む会話で盛り上がりました。w
というわけで、前置きはそろそろココラ辺にしておいて、はい。入口が解り辛く、グルグルとお店の前を行き来して、結局、電話かけて聞いちゃいました。
あ、中からじゃなくて、外からなんですね。正面入り口。w スタート時間が明記されてたので、一瞬焦りましたが、さほどそこら辺はStrictではないみたいです((´▽`) ホッw
広く取られたキッチンカウンターを臨めるソファ席へ、向かい合うよりは、お互いキッチン見える方が楽しいし?横並びに席変えて貰って着席。
グラスペアリングも既に予約済みだったので、順にお料理と共に供して貰います。
お任せ1本コースは、下記の内容で。
・赤玉ねぎ 揚げパン from Italy:酢漬けの玉葱かなり酸っぱ目ですw
・米 竹炭 白海老 キャビア from Japan:上から擦られた柚子の皮(ゼスト)が爽やかで白海老の甘みを引き立たせます。
・米 鮑 雲丹 from Japan:先の白海老に引き続き、お米というか、ライスクラッカー。鮑かなり濃いめの味付けで小さくカットされておりますので、触感と風味は、それと言われないとイマイチ分からないかも?w
・フォアグラ from France:べたに甘いもの×甘い酒できたのかな?マッタリ×マッタリな掛け算風。
・パプリカ from Spanish:中に蟹の身などがギッシリ詰まってます。オレンジワインと化したリースリングは海鮮と相性良いですもんね。しかしリースリングのマグナムボトル初めて見たけど、圧巻ですねぇ~
・豚頭骨煮凝 from France×Chinese:テットドコションも漢字で書くと、すごい迫力(笑)酸味のある台湾の黒いソースを後掛けして、コクのある赤ワインと相性良いです。
・じゃがパス from Earth:じゃがいもをストリング状にカットしてパスタに見立ててるんですね。生の触感がシャキシャキでこれはこれでアリかな?料理って感じじゃないけどw
・カンガルーの尻尾 from Australia×Italy:尻尾の部位とアキレス腱の2種が。けっこう癖があって、肉質も硬くてチューイー(Chewy)顎が鍛えられそうなお肉。これは賛否両論かなりアリそうな食材チョイスか。
先のシャシャーニュ・モンラッシェに然り、こちらに合わせたニュイサンジョルジュも、やはりこの価格でグラスで提供できるブルゴーニュとしては味わいや満足度に限界はありますよねぇー。(料理に合わせたシチュエーションに寄るんでしょうが)
・烏賊2貫 from Japan:ぶ厚めのイカが古代米に乗って、その上のデコレーションも各自違っておりまして。合わせる白ワインも、ニュージーランドのS.B.とボルドーブランの熟成系とで、差をつけての食べ比べ。イカの種類はなんだっけ?w 久しぶりにこんなぶ厚いイカ食しましたw
・LA LA LA 無我夢中 from Iceland:アイスランド産のラムは、比較的クセも控えめであっさり。もはや過去のドラミの定番だった、王道熟成ボルドーと合わせて。ん~ワインに負けてるかな?も少し食べ応えあってもよいかも?なので、お勧めされたように、左隣に敷かれた少し甘めのパプリカソースや、香草入りの揚げパン粉をアクセントに食べるとGoodでやんすね。
・ヨーグルト ポンカン from 愛媛:お皿の端っこに置かれたヨーグルトテイストのアイスにポンカンのオレンジラインが映えまする。
・薔薇 from England:液体窒素でサラサラにした(なんだっけ?w)白い雪のようなパウダーかけて仕上げ☆彡
・オリーブオイル大福 from Spanish×Japan:点々と置かれた大豆が粋?
普段はデザートあまり食べないドラミですが、この日は日本酒も飲むし、アイスクリーム3個もすべて完食致しましたYO!
料理の味というよりは、見た目のエンターテイメント性と色々なグラスワインを楽しむ使い方が合ってますね。
