文人も愛した安心院のスッポン。まずは日本酒で割った血を飲む。そしてエンペラ、肝、卵をいただく。刺身は甲羅の上におかれ、鳥のようでいて四つ足の味がする。小椀のスープはさすが。次の鍋はたっぷりの出汁をたたえて運ばれてくる。澄んだ汁に淡い油滴が浮かび鍋底に肉が鎮座している。揚げ物はそれほど美味しいとは思わなかった。茶碗蒸しは秀逸。エンペラを最も美味しくいただける食べ方かもしれない。あつあつの出汁の香りがたまらない。肝焼も美味しいとは思わなかった。少しかわったレバーという位の印象でしかない。雑炊は甘めのポン酢で味付けされて供されるのだが、一振りの塩の方が多分美味いんじゃなかろうか。安心院の鄙びた田園に一泊二日ゆっくりと宿泊し、おいしいスッポンを食べて1人2万円也。小言をつらつらと書きましたが堪能いたしました。
