高級店でしか食べれないような上質な鮨ネタを、気兼ねなく沢山食べれる、活気ある町鮨です。
門前仲町の駅近くにある「匠」という小さなお寿司屋さん。 軒先に大きなのれんがかかっているのでスグわかります。
引き戸を引いて中に入ると、大将の威勢の良い声が店内の騒々しさに負けないほど響き渡ります。
ここは大将一人とアルバイトの女将さん一人(大将の奥さんではありません)のたった二人で切り盛りしている小さなお店。 席は、カウンター6席、テーブル4人席2つ、小上がり1つで、15人も入ったら息苦しいほどの狭さ、、、なのですがぁぁっ…
ここの鮨ネタは間違えありません!
「ウニ」を頼んだところ、バフンウニが出てきました。(11月) なのに、まるで生うにのような唸る美味しさ!
ミョウバンのイヤな味も一切ありません。
聞いたところ、毎朝大将が築地で良質のウニを仕入れていると言うではありませんか!
まさか赤坂界隈の寿司屋でしか食せないような高級ウニが、ここ門前仲町にあるとはっ
「いくら」も今が一番の旬とのことで大将にお勧めされ、食べてみました。
とても新鮮な生のいくらの醤油漬け。 粒が大きくて、皮が薄くて、薄味なのに濃厚で、こぼれるように沢山のいくらがシャリの量を超えるほど入っています。口の中でイクラがはじけて、もう絶品でした☆彡
ただ、軍艦の海苔の質はもっと上げたほうがいいですね。(このお値段なので文句言えないですが…)
「マグロ」も、正真正銘本物の「生の本マグロ」でした。 味の深さと舌触りもですが、生の歯ごたえに唸ってしまいました!
マグロの後に「大トロ」もいただきました。 (写真参照)大将のデモストレーションに大喜びです。
鮨カウンターで大トロの解体ショーが始まるやいなや、店中のお客さんが一斉に大トロをオーダーしはじめます。
とまぁ、気さくな大将のおかげで、客同士も、(お酒が入っているせいでもありますが)すっかり仲良くなってしまいます。
<後で知ったのですが、匠のお客さん同士でゴルフコンペが定期開催されいるとのこと!>
寿司職人としての大将の腕前も見事なものでした。
「金目鯛の昆布締め」が絶品☆彡 この匠の看板商品とのこと。
「卵焼き」も、塩味が利いていて日本酒に合います。 これも、大将が開店前に御自身で仕込んでいるそうです。
「煮切り醤油」も大将が自ら仕込んでいるとのこと。マグロや大トロや金目鯛を食す際、さらに深みを増しました。
「しゃり」は、酸がそれほど強くない、気どらない人肌の食べやすいお味です。 これだったら子供も食べれますね。
その他、「牡蠣の昆布締め」 「白子焼」 かぼすと塩でいただいた「つぶ貝」「ほたて」も絶品でしたが、食べラからの掲載につき、写真をご覧の上、コメントは割愛させてください。
とにかく、いつも予約でいっぱいで、活気ある店内です。
逆にいえば、店全体が騒然としていて、寿司を食べる緊張感やモチベーションが全く湧き出ません。
それに、客の数に対して大将一人がとても忙しそうなので、逆に客が店員に気を使って、オーダーを出さなければなりません。
つまり、ワガママなお客さんや、黙って鮨を堪能したい食通には、この店は向かないと思います。
お勧めはまず平日(火~木曜日)の早い時間、おひとり様でカウンター席で食してみて、、、
雰囲気を確認してOKそうだったら、二回目以降は電話予約して、お連れ様と一緒にテーブル席で鮨を堪能してください。
握りお任せ&酒1.5合で6000円もあれば十分ご予算内です。
