京都市下京区烏丸仏光寺入ル一筋目南入ル匂天神町634‐3、
京料理の名店「和ごごろ 泉」さん。「THE TABELOG AWARD2023」ブロンズ受賞、および「日本料理WEST百名店2023」にも選ばれた人気のお店です。1か月程前に予約をして訪問しました。
正午の予約、少し前にお店に着きました。路地裏にある古民家風の一軒家、お店の方が小路に打ち水をされていました。京都らしい風情のあるお店です。
「お昼のコース」(13,860円)を予約しておきました。
最初に「うぶ茶」、続いて「振る舞い酒」が振舞われ、コースがスタートです。
最初の飲み物は「生ビール」。
「先付」・・3種のきのこ・車海老・汲み上げ湯葉・銀杏・桑名海苔が煮凝りとともに盛り合わせてあります。湯葉の口当たりがいい、心地よい酸味を感じる煮凝りとともに頂きました。
「椀物」・・はもと自家製厚揚げ、柚子添え。はもは梅肉でさっぱりと。
ここからは日本酒を。お店の名前がついた
「和ごころ 泉」と
「富翁 純米大吟醸」を。
「お造り」・・さわら(淡路)・しびまぐろ(北海道)・たい(明石)の盛り合わせ。さわらはたたきになっていますね。醤油の他にゲランドの塩も用意されました。
「八寸」・・盛り付けには秋の草花があしらわれています。「なます」「紫ずきんとかんしょ」「玉子カステラ」「穴子と栗の飯蒸し」「いくら」「鯵のきずし」「鴨ロース」。時間をかけて仕上げているという柔らかな「玉子カステラ」や香ばしく焼かれた穴子がのった「穴子と栗の飯蒸し」が印象に残ったかな。
「焼物」・・琵琶湖の小鮎の炭火焼き。伊達の葉の「おろし酢」が添えられます。弱火で1時間程焼いているとのこと。何度もかえして鮎の脂を鮎にまとわりつかせるように仕上げているとのことです。揚げてあるような食感ですね。
「炊き合わせ」・・甘鯛と甚五右ヱ門いもなどの炊き合わせ。山形の芋煮で人気の芋、ねばりがあって美味しいですね。
「食事」・・釜炊きご飯・丹波篠山の八丁味噌を使ったお椀・香の物・ちりめん山椒の提供。釜炊きご飯、残った分は希望で「おにぎり」にしてお土産にしてくれます。
「水菓子」・・無農薬無花果と自家製ブランマンジェ。
最後に「栗のお菓子」と「抹茶」でコースが終了しました。
カウンターの奥の赤い暖簾の向こう側が板場のようで、運んだり料理の説明は、主に女将さんがしてくれましたが、対応はとても親切ですね。帰りがけには大将も厨房から出てこられ、外で見送ってくれました。京都の素晴らしい日本料理の名店だと思います!!
