南青山、外苑前を経て今、麻布台ヒルズをステージに腕をふるう川手寛康シェフのお店にランチで伺いました。
野菜中心の料理にシフトしたのは地球環境の負荷を減らすため。
肉や魚の比重を下げ畜産にかかる二酸化炭素の排出を軽減し、枯渇する海の資源にも配慮。
"プラントベースをテーマに料理でサステナビリティを表現する"との事で伺う前からワクワクします。
予約は必須、オンラインにて。
1ヶ月前の同日午前0時より開始です。
これがなんと驚きの秒殺です。
今回予約がとれたのは奇跡。
センターキッチンを囲む様に配置されたターブルドットスタイルの客席。
一皿、一皿が仕上がっていくのを眺めるのが新鮮で楽しい。
素晴らしいお料理と接客は言うまでもありませんが、こちらを「最高だ」と感じたポイントは無理に背伸びをする事もなく、食事も雰囲気もゆったりと存分に楽しませていただけた事です。
約3時間の魔法にかけられて身も心も大変満たされました。
