うなぎをお客さんの目の前で捌き、焼きたてを出すのがこだわりのお店。
うなぎの色々な部位の串焼き、うなぎの養殖、天然の食べ比べや、それの蒲焼、白焼や動く心臓を食べれたりなど、うなぎを味わい尽くすことができる。
先代の店主は、新宿うなぎ「カブト」で修行した「岩井 和雄」氏であったが、引退。
2016年に2代目となる現在の大将である「藤森 公将」氏が引き継いだ。

【感想】
父と娘と3人で行ってきました。
今回でかぶとさんは2度目です。
そこまで、うなぎのお店を今まで食べ歩いてきたわけではありませんが、僕が知っている中でここまでうなぎを食べ尽くすことができるお店はないです。
うなぎの頭の部位であり少し固めの骨と共に食べる【えり焼き】のタレから始まり、旨みが強いと言われる背ひれの【ヒレ焼き】、【肝焼き】、【レバー】などの部位が楽しめます。
【動いてる生の心臓】の踊り食い?もありました。噛まないで飲み込むだけ。
うなぎは全体的に、臭みがないわけではなく、良い意味でウナギらしさのある良い臭みがあり、それがタレや塩焼きで繰り出されます。
それぞれ部位によって、臭みだけでなく、食感や、歯ごたえ、味わいなど、全然違くて美味しく楽しいです。
ウナギの白焼も蒲焼も天然と養殖の食べ比べをさせていただきましたが、どちらが美味しいか?脂の量や質。皮の厚さなど、味わい違くて甲乙つけ難かったです。
うなぎは個体によっても全然違うとも言うし、それも含めてたのしむものだなと改めておもいました。
いやー本当に美味しかったし、雰囲気もいい大好きなお店です!
小学生の娘と父と行きましたが、大将も女将さんもスタッフさんも優しく色々と気にかけてくださってるホスピタリティも感じて最高の空間でした!
また、娘を連れて一緒に行ける機会があると嬉しいな!
