【概要】
今、現在日本を代表する日本料理の名店。
店主の「星野 芳明」氏は、伝説の日本料理の名店『京味』で10年以上の修行。
その後、新橋の内幸町で、2012年に独立し「新ばし 星野」を立ち上げた。
2018年に同じ新橋地区に移転し現在に至る。
極限まで素材の力を引き出した、上品かつ繊細な料理は必見。
派手さはなく現代の和食のトレンドになりつつあるイノベーションとは違い、伝統的な和食といった印象。

【感想】
さすが日本を代表する和食の名店でした。
派手さは無いものの、繊細な味わいにワクワク衝撃が止まりませんでした。
やはり和食は出汁ですね。出汁が所々に感じる奥深い料理は美味しさが際立ってます。
以下印象に残ったもの
○粕汁
だしに天竜の酒粕を使ってるとの事。甘酒の香りや甘さがしつつ、出汁がしっかり効いてて、寒い今の季節に心も身体も温まります。
○もちとからすみ
自家製の餅で塩味控えめのからすみを挟んだ料理!適度なからすみの塩味とまろやかさが美味しかった!
○ふきのとうとなまこ
ふきのとうは揚げて、出汁と。苦みはあるのものの最小限で、美味しかった!
○ふぐの白子焼き
ふわふわだけど、表面は適度な焼き加減。
中はトロッとしてます。美味しいなー
○松葉蟹
身が締まってて、味わい高く蟹のいい香りがして最高!蟹酢が生姜が効いてて、これ自体も美味い!
○蟹と蟹味噌
身と味噌の融合ながまろやかで香ばしくて美味しかった。
○ みいものよしのくず
この日、何気にこれが一番好きだったかも?出汁が効きつつ、独特の食感が最高でした。

これは凄い!やっぱりこれが1番か?wwwトラフグの身をカワハギの肝であえるですよ?カワハギの身はありません。トラブルの身の上品さに白菜の芯の食感が合っていて、それにカワハギの肝が!本当に良かった!

トラフグも唐揚げの揚げ方も美味い。
○明石の鯛
明石の鯛!旨味が凄い!プリプリでした!
○白甘鯛の蕪のみぞれあん
蕪のみぞれがさっぱりしつつも、白甘鯛の旨味がいい感じです。
○ぶりの背中のつけ焼き
ブリの背中らしい。若干だけど、レアでそれがこの食感と美味しさのポイントらしい!
○蒸し大根
いい出汁の効き方と大根への染み具合と柔らかさが完璧でした!
○ご飯
なんだろ?こんな美味い米はないよ!
ちりめんじゃこも最高だし、牛のしぐれ煮も美味い。ご飯がススムススム。
鰹節と醤油をかけても食べさせてくれるし、TKGにもしてくれます!
5杯も食べてしまったwww
最高でした。ご縁があって連れて行ってくださった方には本当に感謝です。
