十数年来、大将の仕事を見てきたが、彼の料理・握りは常に進化している。
従来の江戸前鮨を単に極めると言うよりも、食材、調味料、そして、調理技術を含めて、全ての面で、常に良いと思われる組み合わせを用いて「旨い!」と客が感動してくれるような鮨を目指して止まない。
値段は船橋と言う場所を考えれば、確かに高いのかも知れないが、コストパフォーマンスを考慮すれば、都内の一流店より上をいっている面はあるのではないだろうか。
私自身は、かつてのように食べ歩いて比較し出来るわけではないので、これ以上は語ることはしない。
ただ、食はあくまでも嗜好品の一種でもあるので、興味ある方は是非足を運んで、自分にとって「有り」か「無し」かを判断して頂いても良いと思う。
どこの店で食べるにしても、はじめから斜に構えたり、過ぎた期待を持ちすぎず、楽しんで食べて頂ければ、発見はあると思うのです。
