銀閣寺に向かう哲学の道のそばにある割烹です。
なかなか予約が取れないお店ですが、前月の1日朝8時から受け付ける予約電話で奇跡的にその少ない席をゲット。紅葉にの最盛期にはほんの少し早い11月半ばの昼にお邪魔しました。
カウンターで大将たちのにやっと笑わせてくれる料理の説明を聞きながら8640円のコースをいただく時間はなんとも楽しく、何度でも訪れたくなります。料理は京都の軟水を生かした柔らかな出汁使い。とんがりすぎず優しさのある味わいでした。
先付は柿ととんぶり、さばとくるみの燻製、黒豆になるまで燻製して甘味を引き出したえんどう豆など、日本酒が一気に進んでしまうレパートリー。お凌ぎのむかごご飯とイクラの組み合わせも最高。次はとちもちをいれた白味噌の椀。瓶ビール(760円)の後に京都の澤屋まつもとの純米酒・英薫(1080円)に切り替えました。
次の焼き物は「愛のささやき」。鮎の笹焼きです。子持ち鮎にみかんをたっぷり絞っていただくとほくほくの身の食感と香ばしさ、甘さが絶妙。お造りは3カ月育てたコイ。シャクシャクとした食感の素揚げした鱗と一緒にいただきます。里芋やカブ、キノコに小豆の炊き合わせの後、いまも思い出しては食べたくなるほど参ってしまったカレイ。香りといい味わいといい、なんとも言えません。
丹波牛や炊き合わせの後にかまどで炊いたご飯。最初はパリパリのおこげ。「メイン料理」のめざしや漬物とともに。カレイの骨せんべいでまたお酒に手が。ご飯の2杯目は出汁茶漬け。てっぺんに真っ赤な梅肉を載せた「マンハッタンの夕日」。デザートの熟した柿も満腹なのにつるっとお腹に入ってしまいました。
2人で瓶ビール1本、日本酒3合を飲み、一人当たり約10500円。今度は夜にお邪魔します。
