金曜夜ごはん、この日は昔から1度食べてみたいと思ってました蒲田の『初音鮨』さんにお邪魔しました(^ ^)ノ
こちらの初音鮨さんは創業明治26年、2017〜2021年まで食べログアワードシルバー、2022〜2023年食べログアワードブロンズ、2021〜2022年寿司百名店、また2009年〜2020年まで12年連続でミシュランガイド東京の2つ星も獲得しております(^ ^)‼︎
2ヶ月位前に予約をしまして、この日ついに初訪!
せっかくなので大将の中路さんのおまかせコース(60500円)でお願いしました(^ ^)ノ
いやーちょっと前に改装したそうですが、なかなか荘厳なカウンターです‼︎
まずは生ビールで喉洗(^O^)ノ
そしてここから中路ワールドなコースが始まります(^ ^)♪♪
まずは大将自ら赤酢を使ってシャリを切りまして、ひと口づつ味見させてくれます。

いやぁ、恐ろしい料理だった…
まだまだ知らない世界があるんですねぇ( ゚д゚)‼︎
つかこの店より点数の高いお寿司屋さんって、どんな次元だ⁇⁇
とにかく全ての食材が今までのワンランク上をイッてた。
大将の握りは弱めだが、口の中でパラパラどころではない雪溶けのようにシャリが崩れてく。
お料理で印象に残ったのは全てなんだが(笑)まさかのツキノワグマを比良山荘ぢゃなくここで食べられるとは‼︎‼︎
ツキノワグマにセリの根っこを合わせたしゃぶしゃぶ風は臭みなど一切無くまたせりの根っこがまいう〜でした(^ ^)♪♪
最初の鮑も素晴らしかったし、次のとらふぐとウニを合わせたのも最高でした!
本鮪も大間産のを頂けましたし、ウニもほだてのムラサキウニと木村のバフンウニをダブルで食べられたし、松葉ガニもまいう〜だったし、真鱈の白子もいつも食べてるのよりブリッブリだったし、小肌もこういう開き方で食べるのは初めてでした(^ ^)!
