行ったお店2000件目。
この度ご縁があってお誘い頂きました。
予約困難なうえ敷居が高く憧れのお店、いつも指をくわえて他レビュアー様のレビューを拝見していました。
場所は中州の中心部、店頭から高級感漂っています。
入店すると玄関で靴を脱ぎます。
店内は8席、ゆったりとしたおだやかな空間。PM18時お客さん全員着席と同時一斉に始まります。
飲物まずはビール。
お料理はアテから
たこのやわから煮。柔らさからして関門海峡かと思いきや志賀島産。
白子すりながし、固形をすりつぶし流動形状態に手間をかけてます。
あらとたいらぎ。旬のあらと、大粒のたいらぎ。
生いくら。一口丼状態。プチプチとした食感が良いでうs。
香箱蟹と雲丹の饗宴。
香箱蟹は毎年金沢に行って食べていますが、福岡で食べれるのは嬉しい。
トラ河豚皮とあん肝ソース和え。これが日本酒が合います。
あん肝。濃厚さを味わうことができます。
壱岐産かつお。
からすみ炙り。これだけでお酒1合は飲めそうなくらいです。
白子丼。炙り白子とご飯。
お連れ様は日本酒「綿谷」がススんでおります。私はまたビールお代わりしました。
ガリも美味しくてススみます。
ここから握りが始まります。
さより。大型だそう。
赤むつ。
こはだ。
大間産マグロ140キロ級だとか、まずはづけ。
その後に真打、大トロ登場。
日本酒は福島県産「飛露喜」。
鯖は八戸産。九州以外の鯖とは珍しい。
さっきまで活きていた車エビ。湯がきたてなので温かさがほんのり残ります。

煮ハマグリ。
雲丹
赤だし。
煮穴子。づけが流石、貫禄感じます。
赤カブのお漬物。
かんぴょう巻
卵焼きで仕上がりです。
最初はピンとしたはりつめた空気で少し緊張していましたが
お店の方の温かい接客はすばらしく、産地の話から何処・・となって途中日本地図が出てきたりと
派っていた肩もすっかりなじませて頂きました。
真の一流な料理はもちろん接客と、堪能させていただきました。
また行きたくなる・・そんなお店です。
