「平和寿司」さん訪問
今回ラッキーにも友人からお誘いがありまして初訪問できました
名古屋から近鉄電車を使って 桑名駅で下車
タクシーで 千円弱でお店に到着
先客は奥の座敷に家族連れ
私達はカウンターに着席
柔らかい雰囲気のご主人がご挨拶
本日は\15,000.のお任せコース
蛤の入ったお吸い物から始まって鮑の肝和えまで
つまみ系が9品 その後握りへ
ネタはどれも吟味した 旬の美味しい物ばかり
シャリは米酢の白い酢飯
堅さは中庸よりほんの少し堅め
粘り気は少な目
古米を使ったシャリです
私はこの古米を使ったシャリ好きです!
握り鮨を箸でつまんでも崩れる程では無く
口に入れて一口噛むと ほろっと崩れる感触
噛み進んでもネチャネチャしないのが
何とも言えない食感!!
以前は名古屋の「や〇し」さん
古米と赤酢ブレンドを使ったシャリで好きでした
古米をキープするのは
お米屋さんにお願いしないといけないから
誰でもできる事では無いので 中々大変ですね!
個人的には 鮨にシャンパンやワインを合わせるので
赤酢のシャリが大好きですが
今のところ此方のご主人は 赤酢は使わないとの事
でも流石 平和寿司さん美味しかったです
