『一年の計は元旦にあり』ということで2018年は昨年以上に『食』を極め、より多くの『口福』の時を過ごせるように足を向ける『店』も吟味し食べ歩きを楽しむと同時に出処の分からないものは身体の中に入れたくないので外食一辺倒の生活を見直し自身の手にも極力、包丁を持ち宝の持ち腐れになっている南部鉄器のスキレットやハイテク調理器具類を総動員し自分で作って食べる。ことと極ごく一部の例外を除き『受動喫煙』を間接的に強いる食事環境が整わぬ店への立入りをしない。を年頭の目標に掲げました。さて、2018年の食べはじめのディナーは札幌を代表するカリスシェフである『五十嵐 光』さんが目の前のオープンキッチンで腕を揮われる『五十嵐』さんからのスタートです。あれ?と思われる方もきっと居られることでしょう。そうです2017年のディナーで食べ納めをした店『五十嵐』さんで二十四時間後に2018年のディナーの食べはじめです。全席満席の中アミューズには長崎産の鰡子を使った自家製の『唐墨』を3㌢程の厚切りにし炙った一品から『カスベ』=『エイヒレ』の煮こごり風のテリーヌはコリコリとした軟骨とプルプルした身の食感を同時に楽しみ、ふわっふわの『鮟鱇の肝』に『生海胆』の組合せの口福な一品へと繋ながれていきました。これだけふわっふわの鮟鱇の肝は食べた記憶は今まで無いかもしれません。生の『いくら』でも口にした濃厚でねっとりとした感覚に海胆の旨味が重なり合います。そして士幌町の『豚肉』に『穴子』を使った『パテアンクルート』と続きます。実山椒と柑橘が佳きアクセントになっており、ひと口目よりもふた口目の方がじわじわと旨味が増してきます。そして五十嵐シェフのoriginal料理でありspécialitéの『小鰭』のミルフィーユ仕立の登場です。前日のものは仕込んでから10日間余りのもので今回のものは仕込んでから60日間寝かせたもので『新子』サイズの小鰭が170尾も使われているとのこと。発酵とともに熟鮓(ナレズシ)化した味わいは深みも旨味も桁違いです。更に昆布を飼料に混ぜて育てられた新冠町 松本牧場産の『黒毛和牛』のA5の霜降り肉を前日より濃度を薄めたスッポンスープで軽くしゃぶり湯霜にしたものをヘーゼルナッツのペーストと柑橘で味わうしゃぶしゃぶ仕立の肉料理を味わいメインの皿は花巻 石黒農場産の『ホロホロ鳥』のモモ肉をオマール海老の自家製オイルでコンフィと真狩村産の『百合根』と『桜海老』のコンフィを合わせ上から『フォアグラ』のソースを掛けた絶品の一皿の余りの美味しさに身体を仰け反らせ悶絶しながら堪能させていただきました。食後のにはカカオ成分が半端なく使われたショコラのデセールにエスプレッソでひと通りです。料理に合わせて泡からデザートワインまで全6種の完全ペアリングによるマリアージュを満喫させていただきました。座席も両手に華の状態とお気遣いいただき2018年の食べはじめはスタートを切りました。美味しい料理と楽しい時間、札幌美人さんとの会話にも花が咲きとても楽しい時間を過ごさせていただき感謝です。
