東濃のマイレビ様から「竹皮羊羹」を頂きました。
岐阜県土岐市は、老舗の鶴屋製菓謹製の竹皮で包まれた羊羹は
竹皮を開封するや、まずは竹の香りが立つ。
次に説明書も見ず、そのまま包丁を入れ一口摘まむと・・・
あれ?「甘すぎない」(°0°) 普通の羊羹のイメージとは全く違う。
翌々日、もう1本を説明書き通りにカットし、頂くも食感と味は
全く同じ! 当たりまえか(*_*;
砂糖というよりは、水飴の優しい甘さの羊羹の歯ごたえは、重すぎず
軽すぎず丁度良いもちもち感と羊羹の中に所狭しと現れる粒餡はじける
歯ごたえとがマッチして何とも言えぬ食感は美味~
これは、焼酎かウイスキーが合うだろうと、先日客人から頂いた
岩井喜一郎ゆかり「岩井トラディション ワインカスクフィニッシュ」
で美味しく頂いた。
SG調理塾教え子達がくれたウイスキーをあてに頂く土岐の銘菓は、
戦国美濃源氏・土岐氏を偲ばせ、歴史好きには至福のひと時となる。
