金曜日(4月7日)のお昼はキャナルシティ向かいの
鮨蒼天さんにお伺いしました。
1週間前に食べログでお昼のおまかせ7,000円を
予約してあります。
13時の予約で入店すると待ち合いがあるが、
すぐに女性の案内で客室へ。
ヒバの1枚板のカウンターに座り心地の良い椅子が
8席、ブルーの壁は漆喰、素敵な和の空間です。
キャナルシティの向かいなのに静かです。
ドリンクはノンアルコールの麒麟ゼロイチ
まず茶碗蒸し
熱々で出汁が効いて美味しい。
昼のおまかせはにぎり中心です。
ヤリイカ、飾り包丁を入れて炙り、柑橘と胡麻塩
マグロに焼いた餅を乗せ、金沢の粉醤油を散らして
イシダイ、このわたと海ぶどうを乗せて
カンパチ、もろみを乗せて
車海老、頭は素揚げ、天草

ヤリイカのゲソは片身を炙り、甘だれと七味
サヨリはねぎと生姜を乗せて、玄界灘

かっぱ巻き、
玉子焼きで一通りでした。
シャリは赤酢を使っているがそれほど強くない。
良し悪しもあるが、ネタには一手間加えている。
香港や台湾のお客も多いとのこと。
