It is named "Tajimagen" (Tajima Tuna) because of its high-quality fat, which is almost like tuna, and the deep flavor of the red meat. It has a low melting point and light fat. Like otoro, it melts in your mouth the moment you put it in. The fat has a strong umami flavor and is also sweet, overturning your concept of Japanese beef. It is directly purchased from Ueda Livestock, the only ranch that raises Tajimagen, and is guaranteed to be genuine. ...It will make your tongue go numb.
