As Kitaoji Rosanjin's famous saying goes, "Utensils are the kimono of cooking," and the five colors of sushi go well with the five colors of sushi: white for white meat, red for lean meat, blue for blue fish, yellow for eggs and herring roe, and black for seaweed rolls. We use Bizen ware from a pottery in Okayama Prefecture, which is the birthplace of the owner whose hobby is collecting pottery.
