Although it has a rich umami flavor, it is not overpowering and has a melt-in-your-mouth texture. We are particular about the soy sauce we use, depending on where the sea urchin is produced. In addition, the ``Angel Shrimp and Sea Urchin Fight'', which is made with red shrimp that has been split into pieces and topped with sea urchin, is a luxurious dish accented with the sourness of lemon. The sashimi we use is seasonal fresh fish that has been carefully selected from Tsukiji.
