Food Aoki's special dried sardines
There are two main types of dried sardines used at Aoki: katakuchi sardine and dried sardines. In order to always procure products in good condition, we do not limit the production area, but instead carefully blend products based on their condition, focusing on products from Kujukuri, Seto Inland Sea, and Nagasaki. Be sure to understand how to properly handle each ingredient, such as dried sardines, pork bones, and chicken bones, as well as preparation and simmering times before cooking. After paying careful attention to the temperature, time, order, and placement of each ingredient in the pot, the finished soup is strained, cooled quickly, and refrigerated. Maintains peak flavor
