Born in Tokyo in 1943. He worked as a businessman, but decided to quit his job and become a soba chef. He met Abe Takao of Kashiwa's famous soba restaurant "Takeyabu" at a soba research group to deepen his knowledge, and trained there. At his own restaurant, "Ginhachitei Yazawa," he entertains customers with light-hearted conversation while serving "sobagaki" made using a unique method and authentic handmade soba. Enjoy a heartwarming conversation with the cheerful owner.

Following the teachings of his master, Abe, both the interior and exterior of the restaurant are decorated with unique designs. The restaurant is made of 300-year-old majestic zelkova wood, and the roof, walls, and tables are all handmade! He even painted the walls from the waiting room on the first floor to the interior of the restaurant on the second floor with a paint he made himself by mixing plaster and buckwheat. The owner's passion for soba is reflected throughout the restaurant, so when you visit, we recommend taking a look at not only the food but also the entire space.

The tea cloth-shaped sobagaki, made by vigorously stirring the buckwheat flour all at once, has a chewy and springy texture. The more you chew, the sweetness of the buckwheat and its mellow aroma fills your mouth, allowing you to enjoy the unique texture of this restaurant. It is then topped with a generous amount of thick, potage-like buckwheat soup, which has been strained multiple times. It goes well with sake and allows you to fully enjoy the flavor of the buckwheat, a dish that fully demonstrates Yazawa's love for buckwheat.
