Food Pioneer of aged meat
About 10 years ago now. At a time when aged meat was not attracting as much attention as it does today, the butcher shop ``Nakasei Honten'' was opened in Denenchofu, Tokyo. Our store opened in 2013 as a sister store. Carefully selected domestic Japanese black beef that can withstand long-term aging is aged in our own aging warehouse for about two months. During this time, the chefs thoroughly control the temperature, humidity, and bacteria, and the chefs simply serve Steak or grill them so as not to lose the flavor of the ingredients, which have improved taste and flavor.

At our store, which matures about 40 cows a year, we sell products such as the butt lamp [tie], which can only get about 400 grams from one cow, and [Marukawa], which only gets about 3 kilograms from one cow. We offer rare parts that you cannot taste. Each one is unique and flavorful, and customers' tastes vary widely. There are many parts that you are not familiar with, so please feel free to ask the concierge.

We always have 7 to 8 types of lean meat and 7 to 8 types of marbled aged meat in our showcase. When ordering, we will guide you to the showcase. Our meat consultant will introduce you to the characteristics of each cut, so you can choose your favorite cut and degree of grilling. The taste, aroma, and texture are completely different depending on the part, so we recommend tasting and comparing them. Another feature is that even the same part of the cow has individual differences, so the taste changes every time.
