■Purchasing We buy one fresh raw bonito every day. We are particular about using products from Kochi, Kagoshima, and Miyagi prefectures. ■After receiving your order, add salt, remove excess water, and when the bonito starts sweating, it's ready to eat. ■Straw roasted domestically Made with plenty of rice straw from Miyagi Prefecture. A high flame is produced instantaneously to roast the meat, removing excess fat and giving it a straw scent. ■Finished The bonito is cut into thick pieces, with plenty of seasonings, garlic from Aomori Prefecture, and mineral-rich sea salt. Specialty local sake. Enjoy with shochu rocks.

The bonito purchased daily is grilled with straw. Charcoal-grilled carefully selected meat (Japanese beef, Hayashi SPF pork, fragrant chicken) and seasonal vegetables.
