Food Commitment to fabric
KEVELOS dough is aged in a wine cellar for over 24 hours under strict control of temperature, humidity, and atmospheric pressure to suit various environments such as weather. It brings out the original flavor of wheat to its fullest. In addition, by adding as much water as possible to make the dough soft, the dough is fluffy and extremely soft when baked.
Food Commitment to grilling
Approximately 60 seconds in a wood-fired oven at 500℃. Using oak firewood designated as a source with high far-infrared rays, the craftsmen skillfully adjust the temperature and bake it all at once at a high temperature, resulting in an exquisite texture that is light and crispy on the outside and chewy on the inside.
Food wood kiln
We deliberately chose to use Japanese-made products that require constant maintenance. The black iron wood-fired kiln, made by one of Tokyo's most skilled kilns and made by KEVELOS with outstanding thermal efficiency, has an overwhelming presence in the store.
Food Commitment to garlic
At KEVELOS, we use high-quality garlic available only from contracted farmers and dry it for about 10 days using our unique aging method to concentrate the flavor, and the degree of drying is finely adjusted for each size of garlic to suit the menu. Our Aged Garlic Pizza: Marinara is exquisite.
