The tuna we use is raw tuna from Yamayuki, which is known as ``Japan's best tuna wholesaler'' due to its thorough management, extensive knowledge, and overwhelming quantity. Other fresh fish, sea urchin, etc. are also carefully selected and purchased from Toyosu's finest fresh fish wholesalers, where the best fish from all over the country are gathered. We carefully work with the best ingredients, sparing no time or effort. There is no compromise on the wasabi and soy sauce that complement the sushi. You can enjoy sushi made with the same ingredients as those used at long-established Sushi restaurants in Ginza and other areas, as well as at ultra-high-end restaurants, at a reasonable price.

The characteristic of Edomae sushi is that it takes a little extra effort. Fresh ingredients are salted, pickled, and aged to bring out their flavor. The rice is Sasanishiki, delivered directly from contracted farmers. The elegant taste with less stickiness makes it perfect for sushi. We make red shari using aged red vinegar Yobei, which is difficult to obtain, and white shari using our unique blend of vinegar, and use them depending on the toppings. The temperature of the nigiri also changes depending on the material. The exquisite balance of sushi rice and toppings that melts in your mouth is a true delight.
