Born in Kanagawa in 1963. A leading natural Italian Cuisine chef. We value natural flavors such as olive oil and vegetables. Impressed by the gentle taste of Kyoto cuisine, he continues to serve high-quality, healthy Italian Cuisine cuisine that is gentle on the body and uses many domestic ingredients, especially vegetables. He is well versed in Kyoto vegetables and vegetables that have been native to Japan since ancient times, and uses rare ingredients from all over the country seasonally, such as striped shrimp from Hokkaido, which he has purchased since opening.
Food Specialty dishes
Carefully selected seasonal ingredients that are particular about the four seasons. We offer dishes that will please all generations. We avoid using animal fats such as garlic, chili peppers, butter and cream as much as possible, and instead use a rich olive oil that goes well with vegetables. We deliver menus that bring out the gentle harmony of the ingredients and bring out their unique characteristics.
