We serve short horned Japanese beef (tankaku wagyu) with delicious lean meat. Although it is a Japanese breed (Wagyu beef), it has nothing to do with marbling. In the summer, they eat plenty of grass in the mountains and grow freely. The shorthorn Japanese variety, which is grown with as little stress as possible, has lean meat with elegant fat and a strong flavor.
