For our Cow tongue, we use particularly fatty cuts of beef tongue from ``tanchu'' to ``tangen.'' Furthermore, we polish the bottom part of the tongue and offer carefully selected parts that only take about 40% of the tongue.

Our beef is made from Rump, Tomobara, and Shintama parts of Kuroge Wagyu beef that are graded A4 or above. We carefully select and purchase products with a well-balanced marbling, and cut them in-house. Our special sauce is slightly sweet and goes well with red meat.
