We offer once-in-a-lifetime Italian Cuisine that is in harmony with the essence of Japan, and where the chef's unique sensibilities shine throughout. We use carefully selected ingredients from all over the country to create a variety of dishes that incorporate seasonal ingredients. For example, in the ``Cold Sweet Shrimp Cappellini'', we add sweet shrimp marinated in fortified wine and Marsala sake and vinegar oranges to the cappellini soaked in clam stock. Fascinated by pasta, I turned to Italian cuisine. After repeatedly training at Restaurants in Japan, he moved to Italy and studied for four years. He worked as the pasta manager at a then two-star (currently three-star) Restaurants located along the coast on the outskirts of Naples in southern Italy. After returning to Japan, he explored the meaning of Japanese people serving Italian cuisine in Japan, and decided to open his own restaurant with the desire to serve his own unique Italian cuisine that makes use of ingredients from all over Japan.
