Tokyo Shamo chicken is highly rare due to its limited production, and is a chicken that brings out the traditional Japanese taste to the fullest, such as umami, richness, lean lean meat, and a refreshing taste with low fat content. Male and female fish have different firmness of lean meat and fat content, so we grill them differently and serve them at slightly different degrees of heat. Chicken Hana has been recognized by the Tokyo Metropolitan Government as a ``Tokyo Specialty Ingredient'' as the only restaurant in Bunkyo Ward that uses it.
