伊賀牛は、戦国時代、忍者が牛の肉を乾燥し保存食として携帯していたことから、この牛肉が伊賀牛のルーツであるとも言われ、盆地特有の寒暖の差が激しい気候、そして豊かな緑と清らかな水によって育まれた伊賀牛は、芳醇な香りとコク、とろけるような柔らかさが特徴となっています。 現在肥育される牛は、サシ（霜降り）重視の飼育形態で育てられることが多くなっていますが、その結果和牛本来の旨みを失ってしまった牛肉をしばし
...ば見受けます。一方、伊賀牛は和牛本来の旨みを出すため、伊賀管内の約45軒の肉牛生産農家が毎日牛の気持ちになり、愛情をたっぷり注ぎ込んで飼育管理に勤めています。ストレスを受けず、昔ながらの穀物、稲わらを食べて伸び伸びと育った伊賀牛は、黒毛和牛本来の旨味をたっぷり含んだ牛肉となっていきます。健康的に牛を飼育することで、肉色鮮やかで牛肉の旨みが失われず、口に入れた時に甘みが広がります。
