``Sushi Yamada'' is quietly located in the basement of a building near the Nishiazabu intersection. Once you go down the stairs and enter the store, you will find yourself in a clean and comfortable space illuminated by soft light. You can enjoy the craftsmanship right in front of your eyes from any seat at the 8-seat counter. It is ideal for meals on important days such as dates, entertainment, and anniversaries.

Enjoy about 20 courses of nigiri and snacks, served alternately, and finishing with soup and dessert. The sushi, made with carefully selected seasonal ingredients and lightly salted rice, is easy on the palate and won't leave you tired. The rice used is Hatsushimo from Gifu Prefecture, which has large grains. Adjust the water and cooking temperature daily to bring out the firmness and sweetness. The vinegar is made by combining seven types of red vinegar over several days, taste-testing them, and then using a mixture of sour rice vinegar. You can enjoy the special snacks made with ingenuity.

Masaki Kanamitsu, the master chef, spent seven years as a chef at a Japanese Cuisine restaurant in Shinsaibashi, Osaka from the age of 16, and six years as a sushi chef at a sushi restaurant in Kitashinchi, where he has mastered the skills of connoisseurship, technique, and customer service. In January 2021, he became independent and opened “Sushi Yamada”. We have established an selection course that combines red vinegar sushi that is gentle on the palate and won't make you tired, and sake accompaniments that shine with traditional Japanese Cuisine techniques and flair. His friendly personality and easy-going Kansai-style atmosphere are also attractive.
