ChefChef Kanae Choji - Innovative Italian Cuisine that inherits the spirit of the Middle East
From March 2024, chef Toshifumi Chugashi will move to Kyoto and become the new chef of Kusakata Cusavilla. In 2021, he moved to Tokyo to learn Italian Cuisine cuisine from the ground up, learning from the basics under a Middle Eastern chef. In order to bring out the character of ingredients to the fullest, we continue to visit the production areas and learn from the producers, and continue to evolve in order to express the natural scenery in dishes.
Food Minestrone with dozens of vegetables
The course meals incorporate seasonal vegetables, and the dishes vividly express the changing seasons, incorporating plenty of grass, a vegetable sourced from Akiruno, Tokyo. You can enjoy a beautiful plate, not only with its original and gorgeous presentation, but also with the beautiful tableware in which it is served. The photo shows Kusabashi's signature dish, which is filled with dozens of different vegetables and poured with a soup made from upcycled Prosciutto bones and other scraps.

The chef's free-thinking pairing of drinks with the dishes is also free-thinking. Of course, we are conscious of the terroir that is unique to Kusakata, from traditional wines and wines from Tuscany, where we trained, to unique natural wines and sake from Akiruno.
