Food Enjoy Hiroshima Jinseki beef ◆ Commitment to sustainable ingredients
For the main course, we offer two types of Kuroge Wagyu beef from Hiroshima Prefecture, ``Jinseki Beef'': fillet and strawberry. The soft, delicate flesh and refreshing fat go perfectly with Burgundy wine. We also believe that breeding methods that take into account the health of the cows and the global environment are important from a sustainable perspective. At our restaurant, we try to choose ingredients that have less impact on the earth, such as adding edible flowers from Kajitani Farm, which is famous for its herbs, and offering soy meat a la carte.

For Chef Furuya, duck has been his starting point ever since he used duck meat on his menu when he was selected to represent Japan in a world championship. Our specialty ``Courage Sand'' is our signature dish, made with Kasumi duck from Nishizaki Farm in Ibaraki Prefecture and truffles sandwiched between homemade bread. The duck is grown freely in a stress-free environment and has just the right amount of elasticity, flavor, and light fat. Our Organic Food homemade bread made with Australian ingredients is also very popular, and you can also take it home.
