The ``Ultimate Aged Fish'' is fresh fish that has undergone the ``Tsumoto-style blood removal'' method, which is a hot topic at high-end Sushi restaurants, and has been carefully aged in a dedicated cold storage at the Toyosu Market. By aging fresh live fish to the ultimate age, we create an exquisite sashimi with no odor and concentrated flavor.
