① We use prime grade Black Angus beef, the highest graded by USDA (United States Department of Agriculture). This variety is said to be the most delicious. ②Made in-house for 21 to 30 days in a dedicated aging room. This aging period is considered to be the best, neither too long nor too short. ③The quality of the meat is maintained because it is chilled without any freezing. ④Using the "Black & Blue Method", which bakes all at once at over 900℃ in a custom-built oven to create a crispy surface, the flavor is locked in.
