The mark of delicious shari is that it's not too soft or too hard, but it feels plump, and when you mix it with Sushi vinegar, you can feel the strong flavor in each grain. The sushi rice is held with just the right amount of air, and is held with such exquisite force that it can be broken in 10 seconds between the thumb and middle finger. Handle it with great care, as even the slightest change can drastically change its shape.
