ChefOwner Chef Shinya Sakumoto
Born on July 7, 1982 in Komatsu City, Ishikawa Prefecture. Graduated from Osaka Tsuji Gakuen Culinary School. After graduating, he worked at a local hotel before moving to Nishi. He has worked at numerous Michelin-starred Restaurants such as RestauranteAlameda, FondaSala, RestauranteNeichel, and ElracodeCanFabes. After returning to Japan, he worked as a chef at a Spanish Cuisine Restaurants in his hometown of Ishikawa, and opened FERMiNTXO on July 7, 2011.

Our authentic Spanish Cuisine focuses on dishes from Catalonia (Barcelona) and the Basque Country, and we take advantage of the bounty of nature with a focus on ingredients and cooking methods.
