ChefMr. Hasegawa Zaiyu - A striking individual who is making a leap forward on the world stage
Born in Tokyo in 1978, he trained for five years at the traditional Japanese restaurant "Uwotoku" in Kagurazaka, and then honed his skills at a small restaurant run by his mother. At the age of 29, he went independent and opened "Den" in Jimbocho. In the third year, he switched to a course menu, and in 2011, he was awarded a star in the Michelin Guide. In 2016, he won the "Notable Restaurants" award in the "World's 50 Best Restaurants" list. He was ranked again in 2017, and is attracting attention from all over the world.

The appetizer "Monaka" comes in a distinctive package, and is a dish of sticky foie gras and crispy dried persimmon and smoked daikon radish stuffed into a fragrantly baked mochi shell. Other dishes include the specialty salad "Field Style," which features seasonal vegetables cooked in a variety of ways, and "Den Takki," which is chicken dish wings stuffed with glutinous rice and deep-fried, with a special package. Chef Hasegawa Zaiyu won a Michelin star in 2011, was selected for Asia's 50 Best Restaurants in 2016, and won the Notable Restaurants Award in the World's 50 Best Restaurants.
